Henry Bain was the Captain of the Pendennis Club dining room when he created this legendary sauce for local games, beef and other meats. Its strong vinegar, chili, and tomato flavors combined with sweet chutney and pickled walnuts made it an instant favorite among guests and was known simply as "Henry's Sauce."
